Adding Opti-MUM Red at the beginning of fermentation increases the availability of polysaccharides at a time when polyphenols are being released and diffused. WebImproves body, color stability, and mouthfeel in red wines by making polysaccharides available to complex with polyphenols. Use with Lallzyme EX for best results. Mix with water and add at start of fermentation. Use 1 gram per gallon.
